A nice healthy twist on a classic household favorite. Apple chicken tacos, kale slaw, and parsley lime yogurt sauce.
The “healthier” part is that it was made with less oil. Left per rotisserie chicken with mushrooms, onions, apples, parsley, and red wine vinegar. I sautéed it over a medium flame starting with the chicken and onions. As they started to give off their own liquids, I added the rest of the ingredients and it worked pretty well. I used vinegar to deglaze any solids, add flavor, and steam the mushrooms down and add flavor.
The yogurt sauce, I mixed organic plain yogurt with fresh parsley and juice from half a lime. Flame roasted corn tortilla.
The kale slaw is a mix of cabbage, kale, and parsley dressed with sugar/salt free rice wine vinegar, agave, and xv oil.
As always, no salt. Solid A.
